Pineapple Upside-Down Cake
Pineapple rings and cherries crown a golden cake with a buttery brown sugar glaze.

Method
- Prepare the cake batter according to its package directions.
- In a 12-inch (30 cm) Dutch oven, melt the butter with the brown sugar and stir to combine. Line with foil first if desired.
- Arrange the pineapple rings over the sugar mixture and put a cherry half in each ring.
- Pour the batter over the fruit. Cook with 7–8 coals below and 16–18 above for about 45 minutes, until the cake tests done.
- Carefully invert onto a heatproof serving platter to serve.
