Buttermilk Biscuits
Golden buttermilk biscuits baked in a lightly oiled Dutch oven.

Makes 12 biscuits
Method
- Sift the flour, baking powder, and salt into a bowl.
- Cut in the butter or shortening, or stir in the olive oil, then add the buttermilk to form a dough.
- Knead lightly and roll to 3/4 inch (2 cm) thick. Cut into 2-inch (5 cm) rounds.
- Lightly oil the Dutch oven and arrange the biscuits inside.
- Bake with 6 coals below and 14–16 above until lightly browned and cooked through.
